When Lannot says “the fantasy of the uninitiated”, she is referring to those who have not had the experience of writing before. The people who just read the third and final “dental” draft and think that it was all written at one time sitting at a desk rather than hours of hard work and rough drafts.
By “trusting the process” she is saying she accepted the fact that writing a perfect story isn’t going to be easy, that it isn’t just going to happen overnight and it is going to take hard work. The “more or less” serves to show her doubt at times, when it gets really tough and she wants to give up on “the process”.
Rough drafts are apart of the process, you need a rough draft in order to move on to better and final drafts, these “shitty rough drafts” are essential. I personally agree with this and think this goes beyond just writing, as if these unseen rough drafts have to do with life too. For an example, all people see on TV are the professional athletes being athletes, they don’t see the “rough drafts” of them before they were athletes, when they trained and perfected their craft; likewise, you see the grade people get on tests, but you don’t see the hours practicing the material and the studying they put in.
